Saison base beer fermented in stainless steel, aged in oak barrels previously holding red wine, soured with a mixed lactobacillus culture, and blended with fresh blonde ale. It is intense, dank, and almost savoury, with a rich tartness, and a deep dark near briney funk. There is a hint of oak and wine tannins in the middle, which finishes creamy, jammy, and with a bit of stonefruit. Like a funky spelunk to the center of a long-forgotten wine cave.

 

What is Bloom Culture?

Coming in funky we have our first ever barrel aged releases: Bloom Culture 1, 2, & 3. Over three years ago in early 2020 we brewed a celebratory 500th batch of beer. We fermented it in stainless steel and then split it into four parts and transferred it into oak barrels previously used to age red wine, which were then each inoculated with a different strain of Lactobacillus or Brettanomyces. Then we let them kick it for three years before transferring them out, blending them with each other, with fresh blonde or sour ale, and finishing them on different fruits.

These are pre-2020 beers, brewed in an age that feels like centuries ago, and have aged in the taproom alongside us, witnessing the turning of seasons, many parties, and all the laughter and good vibes pulsating through the taproom and patio in the last three years. 

They are effervescent, tart and funky, microbial wonders, curated by yeasts and bacterias, time, and toasted French oak. We have three different releases, with different levels of funk, dank, sour, fruit, and oak.
